Gran Cru Affiorato

EXTRAVERGINE

Delicate Fruity. It is an extra virgin of absolute excellence. It is a Cru obtained exclusively from olives harvested on the Galantino family's estate in "La Fenice - Coppa Malva" in Trinitapoli. Dr. Galantino personally follows all stages of production, from harvesting carried out exclusively by hand up to the very strict organoleptic examination (panel test). Only a limited run of 5,000 numbered bottles is produced each year.

Delicate Fruity Extra Virgin Olive Oil. Obtained using the ancient method of skimming: we hand-pick the oil flower (2-3%) that floats on top of the Apulian olive paste before pressing. This skimmed EVO oil, cold-pressed without mechanical force, is full-bodied and fragrant, with a perfect balance between aroma and smooth taste.

Light Fruity

EXTRAVERGINE

Light Fruity. It is cold-pressed from selected Apulian olives, milled using traditional granite millstones. The sweetness of the Ogliarola variety prevails in its blend, slightly reinforced in character by the intense flavor of the Coratina variety. The result is an oil with a light flavor, perfect for pairing with delicate dishes both raw and cooked.

Medium Fruity

Medium Fruity. This Galantino extra virgin olive oil, produced by the stone mill method, is cold pressed from selected olives of the typical Apulian Coratina and Ogliarola varieties. Its balanced aroma and flavor, combined with its very low acidity, make it an exceptional oil for raw dressings; used in cooking it gives flavor and digestibility to foods.
