Typical Mediterranean product, the artichoke can be used for the preparation of various recipes. Only the best fruits are selected to be cooked into a solution of inegar and preserved in extra virgin olive oil. Excellent as an appetizer or side dish, they can enrich the taste of any salad.
Grown in the open field and harvested by hand, they are cut into thin slices, left to ripen under salt and finally potted in extra virgin olive oil with fresh mint and spices of the Mediterranean. Their delicious and intense taste makes them an excellent appetizer; they can be used to make the most delicious sandwiches but also to flavor the typical wheat frisa which is a local type of bread.
The cherry peppers, with a typical round shape, are manually harvested in late August; stalk and seeds are removed. Washed in water and vinegar, they are filled with vegetables, and then potted in extra virgin olive oil. They thus become an excellent starter, but also a delicious side dish or a perfect condiment for pasta and rice salads.
Among the most famous gastronomic specialties of Apulian cuisine, cime di rape are picked by hand selecting the most tender parts, seasoned with chili, garlic, vinegar, salt and lemon juice, and potted in extra virgin olive oil, without the use of preservatives. Excellent as an appetizer, they are also perfect sautéed to dress the classic orecchiette.
